    Quick easy stir fry

    • Ribbon noodles (place in a container and cover with boiling water)
    • Chopped firm tofu or sliced tempeh
    • Chopped vegetables (any variety) I used :
      • Parsnip
      • Red pepper
      • Celery
      • Mushrooms

      • Broccoli
      • Snow peas
      • Brussels sprouts
      • Kale


    Heat approximately 2 Tbs water in a wok or frypan with 1tsp cumin seeds. When it starts to simmer add all the vegetables and cover with a lid. After 2 minutes stir and drizzle with a teaspoon of oil, then replace lid. After another minute or so sprinkle with some to tamari and stir to evaporate any liquid.
    Drain noodles in a sieve and rinse with water (removes starch)
    Add noodles to stir fry and mix through.
    (alternatively : omit tofu, and add chickpeas.)
